Peach and Tomato Ricotta Crostini

A fresh and vibrant appetizer featuring crispy toasted baguette slices topped with creamy ricotta, sweet peaches, juicy cherry tomatoes, fresh basil, and a tangy drizzle of balsamic glaze.

  • 1 French baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh peaches, diced
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons balsamic glaze
  • Pinch of salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  2. Bake for 6–8 minutes, or until golden and crisp.
  3. Spread a generous layer of ricotta cheese on each toasted slice.
  4. In a small bowl, combine cherry tomatoes and peaches. Season with a pinch of salt and pepper.
  5. Spoon the peach-tomato mixture over the ricotta-topped crostini.
  6. Drizzle with balsamic glaze and sprinkle with fresh basil before serving.

  • Use ripe but firm peaches for the best texture.
