Peach Pecan Tartlets with Honey Glaze

- For the Tart Crust:
 
- 1 1/4 cups all-purpose flour
 
- 1/2 cup unsalted butter, cold and cubed
 
- 2 tablespoons sugar
 
- 1/4 teaspoon salt
 
- 3–4 tablespoons ice water
 
- For the Filling:
 
- 3 ripe peaches, thinly sliced
 
- 1/2 cup chopped or halved pecans (toasted)
 
- 2 tablespoons brown sugar
 
- 1/2 teaspoon cinnamon
 
- For the Honey Glaze:
 
- 2 tablespoons honey
 
- 1 tablespoon warm water

- In a food processor, pulse flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until dough just comes together.
 
- Shape dough into a disc, wrap in plastic, and chill for at least 30 minutes.
 
- Preheat oven to 375°F (190°C). Roll out dough and press into 4 small tartlet pans. Prick bottoms with a fork and bake for 10 minutes.
 
- Arrange peach slices in a circular pattern over the partially baked crusts. Sprinkle with brown sugar and cinnamon. Top with toasted pecans.
 
- Bake for another 15–18 minutes, until crust is golden and peaches are tender.
 
- In a small bowl, mix honey, warm water, and vanilla. Brush over warm tartlets for a glossy finish.
 
- Let cool slightly before serving. Enjoy warm or at room temperature.

- Use ripe but firm peaches for easier slicing and better texture.
