Peach Tomato Ricotta Crostini with Balsamic Glaze

  • 1 French baguette, sliced into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 cup whole milk ricotta cheese
  • 2 ripe peaches, diced
  • 1 cup cherry tomatoes, halved or quartered
  • 1 tablespoon chopped fresh basil, plus extra for garnish
  • 1 teaspoon honey (optional)
  • Salt and black pepper to taste
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and lightly brush each side with olive oil.
  2. Toast the slices in the oven for 7–9 minutes or until golden and crisp. Let cool slightly.
  3. In a small bowl, gently mix the diced peaches, cherry tomatoes, chopped basil, and honey if using. Season with a pinch of salt and pepper.
  4. Spread a generous layer of ricotta onto each toasted baguette slice.
  5. Spoon the peach-tomato mixture over the ricotta.
  6. Drizzle balsamic glaze over the top and garnish with fresh basil.
  7. Serve immediately while crisp and fresh.
