Peanut Butter Stuffed Dates with Dark Chocolate Drizzle

Naturally sweet Medjool dates stuffed with creamy peanut butter, sprinkled with chopped roasted peanuts, and finished with a rich dark chocolate drizzle. These bite-sized treats are the perfect healthy indulgence—salty, sweet, chewy, and crunchy in every bite.

  • 12 Medjool dates, pitted
  • 1/2 cup creamy peanut butter (or almond butter)
  • 1/4 cup chopped roasted peanuts
  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil (optional, for melting chocolate)
  • Flaky sea salt (for garnish)

Instructions

  1. Slice each date open lengthwise and remove the pits if not already pitted.
  2. Fill each date with about 1–2 teaspoons of peanut butter.
  3. Sprinkle chopped peanuts over the peanut butter filling.
  4. Melt dark chocolate chips (with coconut oil if using) in the microwave in 30-second intervals, stirring in between until smooth.
  5. Drizzle melted chocolate over the stuffed dates using a spoon or piping bag.
  6. Sprinkle with a pinch of flaky sea salt.
  7. Chill in the fridge for 10–15 minutes to set, or enjoy immediately.

Notes

  • Use almond butter or cashew butter for a flavor variation.
  • Store leftovers in an airtight container in the fridge for up to a week.
  • For a firmer texture, freeze for 10 minutes before serving.
