Fudge Base

  • 2 cups Ghirardelli Peppermint Chunks (plus more for garnish)
  • 4 tablespoons candy canes, crushed (divided)
  • 2 tablespoons candy sprinkles

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Mix Butter and Sugars: Using a handheld mixer, blend together the softened butter, brown sugar, white sugar, peppermint extract, and milk until well incorporated and creamy.
  2. Add Dry Ingredients: Gradually add the all-purpose flour, cocoa powder, and salt to the mixture. Mix until just combined to avoid overworking the fudge base.
  3. Incorporate Peppermint: Fold in the peppermint chunks and two tablespoons of the crushed candy canes evenly through the fudge base. Set aside.
  4. Prepare Pan: Line a 9-inch by 9-inch pan with parchment paper, leaving about two inches of paper extending over the sides for easy removal after setting.
  5. Press Mixture into Pan: Evenly press the fudge mixture into the prepared pan, making sure to get into all the corners. Use a small plastic tumbler or rolling pin to smooth and level the surface.
  6. Melt Chocolate Topping: Using a double boiler, melt together the semi-sweet chocolate chips and coconut oil until the mixture is smooth and glossy.
  7. Pour and Smooth Chocolate: Pour the melted chocolate evenly over the fudge base and smooth it into an even layer over the surface.
