Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder

Wet Ingredients

  • 1/4 cup applesauce
  • 1/4 cup neutral-flavored oil
  • 1 teaspoon vanilla extract
  • 12 teaspoons ice-cold water (as needed)

Filling

  • 1/2 cup strawberry jam

Glaze

  • 1 cup confectioners sugar (sugar-free or regular)
  • 2 tablespoons milk or water (as needed)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat your oven to 170°C (325°F). Line a baking tray with parchment paper and set aside to prepare for baking.
  2. Prepare the Dry Ingredients: In a medium mixing bowl, whisk together the whole wheat flour, vanilla protein powder, sugar, and baking powder until fully combined and set aside.
  3. Mix the Wet Ingredients: In a separate small bowl, combine the applesauce, neutral-flavored oil, and vanilla extract, mixing until smooth and homogenous.
  4. Form the Dough: Gradually add the wet ingredient mixture into the dry ingredients, stirring until a dough begins to form. If the dough feels dry or crumbly, add 1-2 teaspoons of ice-cold water to help bring it together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 15 minutes to rest.
  5. Roll and Cut the Pastry: Divide the chilled dough into two equal portions. Roll out one portion between two sheets of parchment paper to a thickness of about 1/8 inch. Use a pizza cutter to cut into 8 equal rectangles. Repeat this step with the second portion of dough.
  6. Fill the Pastry: Arrange the dough rectangles on the prepared baking tray. Spoon a generous amount of strawberry jam onto the center of each rectangle, leaving space around the edges for sealing.
  7. Assemble and Seal: Place a second dough rectangle over each jam-filled piece. Carefully press down the edges with your fingers and use a fork to crimp all around the edges to seal each pop tart completely.
  8. Bake the Pop Tarts: Bake the assembled pop tarts in the preheated oven for 10 to 15 minutes, or until they turn a light golden brown. Once baked, remove from the oven and transfer to a wire rack to cool completely.
  9. Prepare the Glaze: In a mixing bowl, whisk together the confectioners sugar, milk or water, and vanilla extract until smooth. Adjust the consistency by adding more liquid if necessary to achieve a spreadable glaze.
  10. Glaze and Decorate: Once the pop tarts have cooled, spread the glaze evenly over the top of each one, leaving a small border around the edges uncoated. Add sprinkles if desired, and allow the glaze to set at room temperature before serving.

Notes

  • Use sugar-free confectioners sugar or protein powder to reduce sugar content if desired.
  • Whole wheat flour provides a nuttier flavor and extra fiber compared to white flour.
  • Store pop tarts in an airtight container at room temperature for up to 3 days.
  • For a dairy-free glaze, use water or a plant-based milk alternative.
  • Ensure the edges are well sealed to prevent jam from leaking during baking.
