Pumpkin Glazed Donuts

Fluffy, golden pumpkin donuts fried to perfection and dipped in a sweet vanilla glaze — these soft and airy treats are perfect for cozy mornings and fall gatherings.

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water (110°F/45°C)
  • 3/4 cup warm milk
  • 1/2 cup pumpkin purée
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 3 1/2 cups all-purpose flour (plus more for kneading)
  • Vegetable oil, for frying
  • 2 cups powdered sugar (for glaze)
  • 1/4 cup milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. In a small bowl, dissolve yeast in warm water and let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine milk, pumpkin purée, sugar, melted butter, egg, salt, cinnamon, nutmeg, and ginger. Mix until well combined.
  3. Stir in the activated yeast mixture.
  4. Gradually add flour, 1 cup at a time, until a soft dough forms.
  5. Turn dough out onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  7. Punch down dough and roll out to 1/2-inch thickness on a floured surface. Cut out donuts using a round cutter and a smaller one for the center.
  8. Place cut donuts on a parchment-lined tray. Cover and let rise for another 30-45 minutes.
  9. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry donuts in batches for 1-2 minutes per side, or until golden brown. Remove and drain on paper towels.
  10. Whisk together glaze ingredients until smooth. While donuts are still warm, dip each into the glaze and place on a rack to set.

  • Use a kitchen thermometer to maintain oil temperature while frying.
  • Donuts are best eaten fresh but can be stored in an airtight container for up to 2 days.
  • You can substitute pumpkin pie spice for individual spices if desired.
