Instructions

  1. Melt Chocolate and Peanut Butter: Melt peanut butter and chocolate chips together until smooth, either using a double boiler on the stovetop or in short bursts in the microwave, stirring frequently to avoid burning.
  2. First Cereal Coating: Place 3 cups of Rice Chex Cereal into a large bowl. Pour half of the melted chocolate and peanut butter mixture over the cereal.
  3. Second Cereal Coating: Add the remaining 3 cups of cereal to the bowl, then pour the rest of the chocolate and peanut butter mixture on top.
  4. Mix Thoroughly: Stir the cereal gently but thoroughly until all pieces are evenly coated. If you notice excess melted chocolate or peanut butter pooling at the bottom, add additional cereal in ¼ cup increments, up to 7 cups total, until the coating is fully absorbed.
  5. Cool the Mixture: Allow the coated cereal to cool to room temperature or slightly below. Place it in the refrigerator or an outdoor cold space to speed up the cooling, making sure it does not harden completely.
  6. Add Powdered Sugar: Once cooled, add 1 cup of powdered sugar to the bowl. Mix gently but thoroughly to evenly coat the cereal in sugar.
  7. Refrigerate: Chill the mixture in the refrigerator for 15 minutes to help the sugar set and enhance the crunch.
  8. Final Sugar Coating: After chilling, add the remaining powdered sugar in ¼ cup increments, stirring after each addition, until the cereal is coated to your liking.
  9. Store Properly: Transfer the coated cereal to an airtight container and store it at room temperature. It will stay fresh for several days and is great for snacking anytime.
