  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, sliced
  • 2 avocado, sliced
  • 1 cup corn
  • ½ red onion, sliced
  • ½ cup tortilla strips
  • Cilantro for garnish
  • Lime wedges

Instructions

  1. Marinate the chicken: In a large bowl or a gallon-sized zip-top bag, combine the lime juice and zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil. Add the chicken breasts, ensuring they are fully coated with the marinade. Refrigerate for at least 8 hours up to 24 hours to allow flavors to infuse deeply.
  2. Cook the chicken: Preheat a grill pan over medium heat and lightly coat it with cooking spray. Once hot, place the marinated chicken breasts on the pan, cooking 5 to 6 minutes per side without moving them to develop defined grill marks.
