Dry Ingredients
- 150 g (1 1/4 cups) all-purpose flour
- 1/2 tbsp cocoa powder
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/8 tsp baking soda
Wet Ingredients
- 120 g (1/2 cup) buttermilk
- 75 g (1/4 cup + 2 tbsp) granulated sugar
- 60 g (1/4 cup) vegetable oil
- 1 egg
- 1/2 tsp vanilla extract
- red food coloring (to desired shade)
- 1/2 tsp white vinegar
Cream Cheese Glaze
- 28 g (2 tbsp) unsalted butter, softened
- 2 oz cream cheese, softened
- 90 g (3/4 cup) confectioners’ sugar
- 15 g (1 tbsp) milk
- 1/2 tsp vanilla extract
- salt, to taste
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease the donut pans to prevent sticking.
- Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, cocoa powder, baking powder, salt, and baking soda to combine evenly.
- Mix Wet Ingredients: In a medium bowl, whisk the buttermilk, granulated sugar, vegetable oil, egg, vanilla extract, red food coloring, and white vinegar until fully incorporated and smooth.
- Combine Batter: Gently fold the dry ingredients into the wet mixture until just combined. The batter will be thick and may be slightly lumpy; avoid overmixing to keep the texture tender.
- Pipe the Donuts: Transfer the batter to a piping bag or a zip-top bag and pipe each donut mold about two-thirds full. Avoid filling to the top as the donuts will rise while baking.
- Bake: Bake the donuts for approximately 10 minutes or until a toothpick inserted in the center comes out clean. Let them cool in the pans for 5 minutes before removing.
- Cool Completely: Remove the donuts from the pans and transfer to a wire rack to cool completely before glazing.
- Prepare Cream Cheese Glaze: Using a stand mixer with a paddle attachment or a handheld mixer, cream together the softened butter and cream cheese until smooth. Gradually add the confectioners’ sugar, milk, and vanilla extract and mix until the glaze is smooth and creamy. Adjust salt to taste.
- Glaze and Serve: Once the donuts have cooled, dip or drizzle the cream cheese glaze over the top as desired. Allow the glaze to set slightly before serving.
Notes
- Do not overmix the batter to maintain a light and tender donut texture.
- Adjust the amount of red food coloring to achieve your preferred intensity of red velvet color.
- The cream cheese glaze can be stored in the refrigerator for up to 3 days; re-whip before use if it thickens.
- Ensure donuts are completely cooled before glazing to prevent melting the glaze.
- This recipe makes 10 donuts, perfect for sharing or storing for a few days.
