Roasted Garlic Tomato Sauce

Rich, thick, and deeply flavorful, this roasted garlic tomato sauce brings out the natural sweetness of tomatoes paired with the boldness of caramelized garlic. Perfect for pasta, pizza, dipping, or spooning over roasted veggies.

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 6 garlic cloves, roasted and mashed
  • 1 (28 oz) can crushed tomatoes (or 4 cups fresh peeled tomatoes, blended)
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 tsp sugar (optional, to balance acidity)
  • 2 tbsp fresh parsley or dill, chopped (for garnish)

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the mashed roasted garlic and cook for another 1–2 minutes until fragrant.
  4. Add crushed tomatoes, tomato paste, oregano, basil, smoked paprika, salt, pepper, and sugar (if using).
  5. Reduce heat to low and simmer uncovered for 25–30 minutes, stirring occasionally until thickened.
  6. Adjust seasoning to taste. Use immediately or store in a sealed jar in the fridge for up to 5 days.
  7. Garnish with fresh parsley or dill before serving.
