Instructions

  1. Prepare the Chicken: Butterfly the chicken breasts and pound them to about ¼-inch thickness to make rolling easier. Season both sides well with salt, black pepper, garlic powder, dried oregano, and smoked paprika.
  2. Make the Filling: Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped spinach and cook for 1-2 minutes until wilted. Remove the pan from heat and mix in the crumbled feta cheese, chopped sun-dried tomatoes, and red pepper flakes if using.
  3. Fill and Roll: Evenly distribute the spinach and feta filling among the flattened chicken breasts. Roll each breast tightly and secure them with toothpicks or kitchen twine to hold the filling inside during cooking.
  4. Sear the Chicken: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Place the rolled chicken breasts seam side down and sear each side for 2-3 minutes until golden brown and a crust forms.
