Potatoes
- 2 pounds Yukon gold potatoes, cut into 1-inch cubes
- 1 tablespoon kosher salt (for boiling)
Flavorings and Mix-ins
- 3 cloves garlic
- 2 sprigs fresh rosemary
- 4 tablespoons unsalted butter, softened
- ½ cup heavy cream
- ½ teaspoon kosher salt (for seasoning)
- ¼ teaspoon black pepper
- Boil Potatoes: Place the cut Yukon gold potatoes in a large pot and cover them with cold water. Add 1 tablespoon of kosher salt to the water. Bring to a boil over high heat, then reduce to medium heat and simmer the potatoes for 15-20 minutes until they are fork tender.
- Prepare Cream Mixture: While the potatoes cook, combine the heavy cream and softened butter in a small saucepan. Warm over medium heat until the butter melts and the mixture is heated through.
- Infuse Flavors: Add the garlic cloves and rosemary sprigs to the warm cream-butter mixture. Let it steep for 10 minutes off the heat to infuse the flavors. After steeping, remove and discard the rosemary sprigs and garlic cloves, or mash the garlic into the mixture if a stronger garlic taste is desired.
- Drain and Mash Potatoes: Drain the cooked potatoes well in a colander. Return them to the pot. Using a potato masher, ricer, or hand mixer, mash the potatoes until they become smooth and creamy.
- Combine and Season: Gradually add the warm garlic-rosemary cream mixture to the mashed potatoes while mixing to combine thoroughly. Season the mashed potatoes with ½ teaspoon kosher salt and ¼ teaspoon black pepper, or adjust to taste.
- Serve: Serve the mashed potatoes hot, optionally garnished with extra fresh rosemary sprigs and an additional pat of butter for richness.
Notes
- For a stronger garlic flavor, mash the garlic cloves into the cream mixture instead of discarding them after steeping.
- Use Yukon gold potatoes for a naturally creamy texture and buttery flavor.
- Adjust the amount of cream and butter for desired consistency.
- These potatoes pair well with roasted meats, grilled vegetables, or as part of a holiday meal.
