Rustic French Apple Tart

Delicately crisp puff pastry topped with thinly sliced apples, lightly caramelized and served warm with vanilla bean ice cream. A simple and elegant French dessert.

  • 1 sheet puff pastry, thawed
  • 3 large apples (Honeycrisp or Golden Delicious), peeled and thinly sliced
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup light brown sugar
  • 1 tablespoon granulated sugar (for sprinkling)
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons apricot jam (optional, for glaze)
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • Vanilla bean ice cream, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface into a rectangle and place it on the baking sheet.
  3. In a bowl, toss apple slices with melted butter, brown sugar, lemon juice, cinnamon, and vanilla extract.
  4. Arrange the apple slices in overlapping rows on the pastry, leaving a 1/2-inch border around the edges.
  5. Sprinkle the top with granulated sugar.
  6. Bake for 30-35 minutes, or until the pastry is golden brown and apples are tender and slightly caramelized.
  7. Optional: Warm the apricot jam and brush over the apples for a glossy finish.
  8. Serve warm with a scoop of vanilla bean ice cream if desired.

Notes

  • Use tart apples for a more balanced flavor.
  • Chill the puff pastry before baking for a crispier result.
  • Apricot jam adds a nice sheen and sweetness, but can be omitted.
  • Best served fresh but can be reheated in the oven.
