  • 1 medium yellow bell pepper, sliced into 1/4-inch strips
  • 1 small yellow onion, sliced into 1/4-inch strips

Seasonings and Oil

  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar

  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon dried basil

  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes, plus additional to taste

Optional for Serving

  • Thinly sliced fresh basil
  • Chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit. Prepare a large, rimmed baking sheet by lining it with parchment paper to ensure easy cleanup.
  2. Arrange Ingredients: Place the sliced sausage, red and yellow bell peppers, and onion strips in the center of the prepared baking sheet.
  3. Season and Toss: Drizzle the olive oil and red wine vinegar over the sausage and vegetables. Sprinkle with minced garlic, kosher salt, dried basil, dried oregano, ground black pepper, and red pepper flakes. Toss everything gently to combine and arrange in a single even layer.
  4. Bake: Place the baking sheet in the preheated oven and bake for 25 to 35 minutes. Toss the mixture once halfway through the baking time to ensure even cooking. Bake until the peppers are tender to your liking.
  5. Serve: Remove the sausage and peppers from the oven and serve hot. Garnish optionally with fresh basil, chopped parsley, and freshly grated Parmesan cheese if desired.
