Sausage and Vegetable Fried Rice

- 2 cups cooked rice (preferably chilled)
- 250g smoked sausage, sliced
- 1 cup frozen peas
- 1 cup diced carrots
- 1 cup diced yellow bell pepper
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Heat 1 tbsp oil in a large skillet over medium heat. Add sausage slices and cook until browned, about 4–5 minutes. Remove and set aside.
- Add remaining oil to the skillet. Sauté garlic, carrots, and bell pepper for 3–4 minutes until slightly tender.
- Add peas and cook for another 2 minutes.
- Stir in cooked rice, breaking up clumps. Season with soy sauce, paprika, salt, and pepper.
- Return sausage to the skillet and mix well. Cook for 2 more minutes to heat through.
- Garnish with chopped parsley before serving.
Notes
- For best texture, use day-old chilled rice.
- Swap smoked sausage for chicken sausage or tofu for a lighter option.
- Add a splash of sesame oil at the end for extra flavor.
- Can be customized with other vegetables like corn, zucchini, or green beans.
