Sausage and Vegetable Fried Rice

A flavorful and hearty fried rice dish loaded with smoky sausage, colorful vegetables, and perfectly seasoned rice, all cooked in one pan for a quick and satisfying meal.

  • 2 cups cooked rice (preferably chilled)
  • 250g smoked sausage, sliced
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1 cup diced yellow bell pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tbsp oil in a large skillet over medium heat. Add sausage slices and cook until browned, about 4–5 minutes. Remove and set aside.
  2. Add remaining oil to the skillet. Sauté garlic, carrots, and bell pepper for 3–4 minutes until slightly tender.
  3. Add peas and cook for another 2 minutes.
  4. Stir in cooked rice, breaking up clumps. Season with soy sauce, paprika, salt, and pepper.
  5. Return sausage to the skillet and mix well. Cook for 2 more minutes to heat through.
  6. Garnish with chopped parsley before serving.

Notes

  • For best texture, use day-old chilled rice.
  • Swap smoked sausage for chicken sausage or tofu for a lighter option.
  • Add a splash of sesame oil at the end for extra flavor.
  • Can be customized with other vegetables like corn, zucchini, or green beans.
