Chicken and Marinade
- 400 g Chicken thighs, cut into small pieces
- 2 tablespoon soy sauce
- 1/2 tablespoon dark soy sauce
- 1/2 tablespoon oyster sauce
- 1/2 teaspoon black pepper powder (more or less to taste)
- 2 tablespoon corn starch
Vegetables and Oil
- 2 cup scallions, chopped (white and green parts separated)
- 4 tablespoon oil
- Preparing: In a mixing bowl, combine the chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper powder, and corn starch. Mix well to ensure all chicken pieces are evenly coated. Let the chicken marinate for 10 minutes. While marinating, chop the scallions, keeping the white parts separate from the green parts for different stages of cooking.
- Pan frying chicken: Heat 4 tablespoons of oil in a non-stick pan over medium heat. Add the marinated chicken pieces to the pan and fry until they are fully cooked and lightly browned, stirring occasionally to cook evenly.
- Adding scallions: Add the white parts of the scallions to the chicken in the pan and cook until they soften, about 2-3 minutes. If the chicken pieces are larger or bone-in, cover the pan with a lid and let cook through. Then add the green parts of the scallions and stir fry for 10-20 seconds to retain their vibrant color and fresh flavor.
- Serving: Optionally sprinkle more black pepper or additional chopped scallions on top before serving. Serve the scallion chicken hot, accompanied by steamed rice or noodles for a complete meal.
