Shaved Carrot Salad with Feta, Mint & Pistachios

A colorful, fresh salad of shaved carrots with tangy feta, fragrant mint, and crunchy pistachios, dressed in a zesty lemon-honey vinaigrette.

Ingredients

  • 4 large carrots, peeled and shaved into ribbons
  • ¼ cup crumbled feta cheese
  • ¼ cup shelled pistachios, chopped
  • 2 tbsp fresh mint leaves, chopped
  • 1 tbsp sesame seeds (optional)
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Use a vegetable peeler to shave carrots into long ribbons and place them in a large bowl.
  2. In a small jar or bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified.
  3. Pour dressing over carrots and toss gently to coat.
  4. Sprinkle with feta, pistachios, mint, and sesame seeds if using.
  5. Serve immediately or chill for 15 minutes to allow flavors to meld.

Notes

  • For extra flavor, add a pinch of ground cumin to the dressing.
  • Use a mandoline for quicker and more uniform carrot ribbons.
  • This salad pairs well with grilled chicken or fish.
