- 4 large carrots, peeled and shaved into ribbons
- ¼ cup crumbled feta cheese
- ¼ cup shelled pistachios, chopped
- 2 tbsp fresh mint leaves, chopped
- 1 tbsp sesame seeds (optional)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- ½ tsp Dijon mustard
- Salt and black pepper to taste
- Use a vegetable peeler to shave carrots into long ribbons and place them in a large bowl.
- In a small jar or bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified.
- Pour dressing over carrots and toss gently to coat.
