Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Sandwich Components

  • 6 sandwich rolls
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the slow cooker: Place the chicken breasts in the slow cooker and pour the chicken broth over them, ensuring the chicken is mostly covered for even cooking.
  2. Season the chicken: In a small bowl, combine the grated Parmesan cheese, minced garlic, dried basil, dried parsley, salt, and black pepper. Sprinkle this mixture evenly over the chicken breasts in the slow cooker to infuse flavor while cooking.
  3. Cook the chicken: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded with a fork.
  4. Preheat the oven: About 10 minutes before the chicken is done, preheat your oven to 375°F (190°C) to prepare for toasting the sandwich rolls.
  5. Shred the chicken: Transfer the cooked chicken to a plate and shred it thoroughly with two forks. Return the shredded chicken to the slow cooker, mixing it well with the remaining flavorful juices to keep it moist.
  6. Prepare the rolls: Split the sandwich rolls in half and brush the interior sides with the melted butter mixed with garlic powder. Place the rolls in the oven and toast for about 5 minutes or until golden brown and slightly crispy.
  7. Assemble the sandwiches: Spoon the shredded chicken mixture onto the bottom half of each toasted roll. Sprinkle shredded mozzarella cheese generously over the chicken and cover with the top half of the rolls.
  8. Serve: Serve the sandwiches hot immediately to enjoy the melty cheese and tender garlic-infused chicken.

Notes

  • For extra flavor, consider adding a splash of white wine or lemon juice to the chicken broth before cooking.
  • You can substitute sandwich rolls with hoagie buns or ciabatta for different textures.
  • Leftover shredded chicken can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Adding sliced tomatoes or fresh basil leaves inside the sandwich can provide a fresh twist.
  • Use low sodium chicken broth to reduce salt content if desired.
