Creamy and indulgent smoked Gouda mashed potatoes made with Yukon Gold potatoes, butter, sour cream, and warm heavy cream, delivering a rich smoky flavor and velvety texture perfect for any comforting meal.

Ingredients

Scale

Potatoes

  • 2 ½ Yukon Gold potatoes, peeled and quartered
  • Salt and freshly ground pepper, to taste

Dairy

  • 6 tablespoons unsalted butter, sliced
  • 2 cups (about 4 ½ ounces) finely grated smoked Gouda
  • ½ cup sour cream, room temperature
  • ½ to ¾ cup heavy cream or half and half, warmed

Instructions

  1. Prepare Potatoes: Place the peeled and quartered Yukon Gold potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water.
  2. Cook Potatoes: Bring the pot to a boil over medium-high heat and cook the potatoes for about 15 minutes or until they are very tender when pierced with a fork. Drain the potatoes in a colander.
  3. Rice Potatoes: Using a potato ricer, rice the drained potatoes back into the pot off the heat, ensuring a smooth base for the mash.
  4. Incorporate Butter: Stir in the sliced unsalted butter, mixing until it fully melts and blends into the potatoes, enriching their flavor and texture.
  5. Add Cheese and Creams: Add the finely grated smoked Gouda, sour cream, ⅓ cup of the warm heavy cream, and a pinch of salt and freshly ground pepper. Stir until the potatoes become smooth and creamy. Add more heavy cream as needed to reach your desired consistency.
  6. Season and Serve: Taste the mashed potatoes and adjust the seasoning with additional salt and pepper if necessary. Serve immediately for the best taste and texture.

Notes

  • Use warm heavy cream to avoid cooling down the mashed potatoes and ensure they stay creamy.
  • Adjust heavy cream quantity based on desired creaminess.
  • For a smokier flavor, consider lightly smoking the butter before incorporating it.
  • Best served fresh to enjoy the creamy texture and flavors at their peak.
