Cheese Sauce

  • 1 cup whole milk

Burritos

  • 1 tablespoon vegetable oil
  • 1/3 cup white onion, chopped
  • 1/3 cup bell pepper, chopped
  • 2 cups chicken, cooked and shredded
  • 1/2 cup cheddar or pepper jack cheese, shredded
  • 1/2 teaspoon chile powder
  • 1/2 cup green enchilada sauce
  • 78 large flour tortillas
  • fresh jalapeno, seeded and sliced (optional, for topping)
  • tomato, seeded and chopped (optional, for topping)
  • cilantro (optional, for topping)
  • additional green enchilada sauce (optional, for topping)

Instructions

  1. Prepare Cheese Sauce: Heat butter and flour in a small saucepan over medium heat, whisking to form a smooth paste. Slowly add milk while whisking until smooth. Add shredded cheese and whisk continuously until the sauce thickens. Adjust thickness by adding more milk if desired. Add salt, remove from heat, and set aside.
  2. Sauté Vegetables: Preheat oven to 350°F. Heat vegetable oil in a medium skillet over medium heat. Add chopped bell pepper and onion, sautéing until soft. Remove from heat.
  3. Mix Burrito Filling: Transfer sautéed vegetables to a large bowl. Add cooked shredded chicken, shredded cheese, chile powder, and green enchilada sauce. Toss well to combine.
  4. Assemble Burritos: Spray a 9×13 baking dish with cooking spray. Divide the chicken mixture evenly among the flour tortillas. Roll each tortilla tightly and place seam-side down, snuggly fitting them into the baking dish.
  5. Add Cheese Sauce and Bake: Pour cheese sauce over the rolled burritos. Optionally, drizzle additional green enchilada sauce on top. Bake uncovered in the preheated oven for 15-20 minutes, or until the edges of the tortillas become golden and toasty.
  6. Serve: Remove from oven and top with desired toppings such as sliced jalapenos, chopped tomatoes, and cilantro. Serve hot and enjoy!
