Meat Sauce
- Olive oil for cooking
- 1 medium white onion, finely diced
- 2 garlic cloves, finely diced
- 500g ground beef (12% fat)
- 1 tablespoon tomato puree
- 80ml red wine
- 500g tomato passata
- 240ml beef stock
- ½ tablespoon Worcestershire sauce
- ½ bunch fresh basil, chopped
- ½ teaspoon dried oregano
- ½ teaspoon sugar
- 20g freshly grated parmesan
Spaghetti
Bread Bowls & Topping
- 6 crusty white rolls
- 100g butter, melted
- 30g parmesan for butter
- 1 tablespoon fresh parsley, finely chopped
- 3 garlic cloves, made into paste
- 200g mozzarella, shredded
- Prepare the Meat Sauce: Heat olive oil in a large pan over medium heat. Cook the diced onion until golden, then add the finely diced garlic and sauté briefly until fragrant. Add the ground beef and brown it thoroughly, breaking it up as it cooks. Stir in the tomato puree to combine.
- Simmer the Sauce: Pour in the red wine and allow it to reduce slightly for a few minutes. Then add the tomato passata, beef stock, Worcestershire sauce, chopped basil, dried oregano, and sugar. Season with salt and pepper to taste. Let the sauce simmer gently for about 25 minutes, stirring occasionally until it thickens. Stir in the freshly grated parmesan at the end.
- Prepare the Bread Bowls: Cut the tops off the crusty white rolls and hollow out the centers carefully, creating bread bowls. In a bowl, mix the melted butter with garlic paste, freshly chopped parsley, and parmesan cheese. Brush this garlic-parsley-parmesan butter inside and on the outside of each bread bowl to impart flavor and help crisp up the crust while baking.
- Cook the Spaghetti: Boil the spaghetti in salted water until al dente according to package instructions. Drain and immediately transfer the hot spaghetti into the meat sauce. Toss well to ensure every strand is coated with the thick sauce.
- Assemble the Bowls: Spoon the saucy spaghetti generously into each hollowed bread bowl, making sure there is plenty of sauce on top. Sprinkle a generous amount of shredded mozzarella cheese over each filled bowl to create a gooey topping.
- Bake to Finish: Place the filled bread bowls on a baking tray and bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until the bread is crisp and the cheese has melted. For a golden cheese crust, optionally broil the bowls for 1-2 minutes until bubbly and brown.
