  • 1/4 cup lemon juice

Mocktail Assembly

  • Ice cubes
  • 1/4 cup blueberry syrup (plus more to taste)
  • 1/2 cup sparkling water*
  • Few dashes of orange bitters (optional, to elevate flavors)

Instructions

  1. Prepare Blueberry Syrup: In a small saucepan, combine the water, blueberries, rosemary, and ginger. Bring the mixture to a boil, then cover and simmer gently for 20 minutes until the blueberries lose most of their color and the mixture becomes dark and fragrant.
  2. Strain and Sweeten: Strain the blueberry mixture through a fine sieve or cheesecloth into a measuring cup or jar. Add the maple syrup and lemon juice, stirring thoroughly to combine. Set the syrup aside to cool slightly.
  3. Assemble the Mocktail: When ready to serve, fill drinking glasses with ice cubes. Pour in 1/4 cup of the blueberry syrup, then top each glass with approximately 1/2 cup of sparkling water. Adjust sweetness by adding more blueberry syrup or sparkling water as desired. Optionally, add a few dashes of orange bitters to enhance and round out the flavors. Stir gently before serving.
  4. Storage: Store any leftover blueberry syrup in the refrigerator for up to 1 week or freeze it in an ice cube tray and transfer cubes to a sealed container for up to 1 month.
