  • 2 chorizo or andouille sausage links (casing removed)

  • 1/2 cup carrot (sliced)
  • 1/4 cup celery (sliced)
  • 2 garlic cloves (minced)
  • 1 lb. yukon gold or red potatoes (diced)
  • 2 cups kale (stems removed)

Seasonings and Liquids

  • 2 tsp smoked paprika
  • 32 oz. chicken broth
  • 1 cup water
  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

  1. Cook the sausage: Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage links (with casing removed) and cook until browned, about 5 minutes. Use a slotted spoon to remove the sausage and set aside, keeping the sausage grease and oil in the skillet.
  2. Sauté the aromatics: In the same skillet with the leftover oil and sausage grease, add the diced onion, sliced carrots, sliced celery, minced garlic, and smoked paprika. Stir occasionally and cook for 2 to 3 minutes until softened. If the onion starts to brown too quickly, add an additional tablespoon of olive oil.
  3. Add potatoes and kale: Stir in the diced potatoes and kale, mixing everything together to combine well with the sautéed vegetables and spices.
  4. Add liquids and simmer: Pour in the chicken broth and water. Bring the soup to a boil over medium-high heat, then reduce the heat to low and cover with a lid. Let it simmer for about 15 minutes or until the potatoes are tender.
  5. Reintroduce the sausage and finish: Add the cooked sausage back into the skillet with the soup. Stir well to combine all ingredients and heat through.
  6. Season and garnish: Season the soup with salt and pepper to your taste. Serve hot, topped with freshly chopped parsley for a bright, fresh finish.
