Strawberry Shortcake Overnight Oats Parfait

A creamy layered parfait of vanilla-infused overnight oats, juicy strawberries, whipped yogurt topping, and crunchy granola – this sweet and wholesome breakfast tastes just like dessert, but is healthy enough to start your day right.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1/3 cup granola
  • Optional: whipped cream or coconut whipped topping for garnish

Instructions

  1. In a bowl, combine oats, milk, Greek yogurt, maple syrup, and vanilla extract. Stir until well combined.
  2. Cover and refrigerate overnight, or for at least 6 hours, until the oats are soft and creamy.
  3. When ready to serve, layer sliced strawberries at the bottom of a glass or jar.
  4. Spoon a generous layer of overnight oats over the strawberries.
  5. Repeat layers as desired, finishing with oats on top.
  6. Add a dollop of whipped topping and sprinkle with granola.
  7. Garnish with extra strawberry slices. Serve chilled.

Notes

  • Use non-dairy milk and coconut yogurt to make this parfait vegan.
  • For extra protein, add a scoop of vanilla protein powder to the oat mixture.
  • Try swapping strawberries with raspberries, blueberries, or peaches for variety.
