  • 1 cup fresh strawberries, halved
  • 1 avocado, diced
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup walnuts, roughly chopped
  • 1 tablespoon pumpkin seeds (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon poppy seeds
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, poppy seeds, salt, and pepper to make the dressing. Set aside.
  2. In a large bowl, combine baby spinach, strawberries, avocado, goat cheese, walnuts, and pumpkin seeds (if using).
  3. Drizzle the salad with the prepared dressing just before serving.
  4. Gently toss to combine and coat the ingredients evenly.
  5. Serve immediately as a light main dish or vibrant side salad.

  • Use ripe but firm avocado for best texture.
  • Add grilled chicken or quinoa for extra protein.
