Ingredients

Scale
  • For the Potato Dough:
  • 2 lbs potatoes, peeled and cubed
  • Salt to taste
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon black pepper
  • For the Filling:
  • 1 tablespoon olive oil
  • 1/2 lb ground beef or ground turkey
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • For Coating & Frying:
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • Oil for frying

Instructions

  1. Boil the potatoes in salted water until fork-tender. Drain and mash until smooth. Let cool slightly, then mix in egg, flour, salt, and pepper to form a pliable dough.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add ground meat, cook until browned. Stir in parsley, salt, and pepper. Let cool.
  3. Take a portion of potato dough, flatten it into a disc, and place a spoonful of meat mixture in the center. Seal and roll into a ball.
  4. Dip each ball into beaten egg, then coat with breadcrumbs.
  5. Heat oil in a deep pan and fry the potato balls until golden and crispy on all sides. Drain on paper towels.
  6. Serve warm with fresh herbs or dipping sauce of choice.

Notes

  • Use starchy potatoes like Russets for a fluffier dough.
  • Ensure meat filling is completely cooled before stuffing to prevent breaking the dough.
  • These can be made ahead and frozen before frying.
