- 2 cups all-purpose flour, plus more for dusting
- ½ teaspoon salt
- ½ cup warm water (plus more as needed)
- 1 tablespoon olive oil (for dough)
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 garlic clove, minced
- 2 tablespoons chopped fresh parsley or dill
- ¼ teaspoon black pepper
- 1 tablespoon olive oil or butter (for cooking)
- In a bowl, whisk flour and salt. Add warm water and olive oil, mixing to form a soft dough. Knead briefly until smooth. Cover and rest for 15 minutes.
- In another bowl, combine chopped spinach, feta, garlic, parsley, and pepper. Mix well.
- Divide dough into 6 equal balls. Roll each into a thin circle, about 6–7 inches in diameter, dusting with flour as needed.
- Place a portion of spinach‑feta filling on one half of each circle, leaving a small edge. Fold the dough over to enclose the filling and press edges to seal.
- Heat a skillet over medium heat and brush with olive oil or melt butter. Cook each gözleme for about 2–3 minutes per side, until golden brown with charred spots.
- Remove from pan, slice into wedges, and serve warm.
