  • 45 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 13 tablespoons Cajun seasoning
  • 1 tablespoon Italian seasoning
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 1 tablespoon sun-dried tomato oil (oil from sun-dried tomatoes)

Stuffing Mixture

  • 4 ounces garlic and herb cream cheese (see below)
  • 10 ounces frozen spinach, thawed and squeezed of excess water
  • 1/4 cup shredded Mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 4 sun-dried tomatoes, roughly chopped

Garlic & Herb Cream Cheese

  • 4 ounces softened cream cheese
  • 1 teaspoon minced garlic
  • 1 tablespoon Italian seasoning

Instructions

  1. Prepare the Chicken: Butterfly each chicken breast carefully, ensuring not to cut all the way through. Rub the outside of each chicken breast with sun-dried tomato oil. Season the outside of the breasts evenly with Cajun seasoning, Italian seasoning, and paprika. Sprinkle the inside of each breast with onion powder. Set aside.
  2. Make the Stuffing: In a mixing bowl, combine garlic & herb cream cheese, thawed and drained spinach, chopped sun-dried tomatoes, shredded Mozzarella, and Parmesan cheese. Mix until well incorporated.
  3. Stuff the Chicken: Add about one tablespoon of the stuffing mixture to the inside of each butterflied chicken breast. Spread the filling evenly, then carefully press the breast together to seal. Use toothpicks if necessary to secure the edges and prevent filling from spilling out during cooking.
  4. Cook the Chicken: Heat olive oil in a large pan over medium-high heat until hot. Place each stuffed breast in the pan. Immediately reduce the heat to medium and cover the pan with a lid. Let the chicken cook for 8-10 minutes undisturbed.
  5. Flip and Finish Cooking: Carefully flip the chicken breasts over, cover again, and cook for an additional 8-10 minutes. Continue until chicken is cooked through and internal temperature reaches 165°F (75°C).
  6. Rest and Serve: Remove chicken from the pan and allow it to rest for 5 minutes before serving. Remove toothpicks and enjoy your delicious stuffed Tuscan chicken.
  7. Garlic & Herb Cream Cheese Preparation: Mix softened cream cheese, minced garlic, and Italian seasoning together until smooth. Use this mixture as the base for the stuffing.

Notes

  • Do NOT use more than 1 tablespoon of stuffing per chicken breast to prevent spillage and burning during cooking. Excess stuffing can be reserved for a sauce or other uses.
  • Adjust stove heat carefully to medium or low medium to allow thorough cooking without burning the chicken. Cooking times may vary depending on stove and pan.
  • Butterflying chicken breasts evenly helps in proper stuffing and cooking.
