  • 2 flour tortillas (small, taco-sized)
  • 2 large eggs
  • 2 strips bacon
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2 tablespoons chopped red onion
  • Fresh cilantro leaves (a handful)
  • 1 tablespoon olive oil or butter (for frying)

Instructions

  1. In a skillet over medium heat, cook bacon until crispy. Drain on paper towels.
  2. In a small bowl, mash the avocado with lime juice, salt, and pepper.
  3. In a clean pan, heat olive oil or butter. Crack the eggs and cook sunny-side-up until whites are set and yolks remain runny.
  4. Warm the tortillas in a dry pan or microwave until soft and pliable.
  5. Spread mashed avocado on each tortilla. Top with a sunny-side egg, crispy bacon, chopped red onion, and cilantro.
  6. Serve immediately with extra lime wedges if desired.
