Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 2 tablespoons sriracha
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons water

Pasta and Garnish

  • 8 oz spaghetti
  • Salt for boiling water
  • 2 tablespoons butter
  • Sesame seeds, toasted
  • Fresh parsley or green onions, chopped
  • Extra red pepper flakes, optional

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to package instructions. Reserve ½ cup of the pasta cooking water, then drain the pasta and toss it with 2 tablespoons of butter to coat evenly and keep it from sticking.
  2. Prepare the Steak: Pat the sirloin steak cubes dry with paper towels. Season them with salt and black pepper to taste. Add 1 tablespoon soy sauce and, if desired, 1 teaspoon cornstarch to lightly coat the steak, which helps give a nice sear and slightly thickens the sauce later.
  3. Sear the Steak: Heat 1 tablespoon olive oil in a large skillet or frying pan over high heat. Add the steak cubes in a single layer and sear until browned on all sides and cooked to your preferred doneness, about 2-3 minutes per side. Remove the steak from the pan and set aside.
  4. Make the Sauce: In the same pan, reduce heat to medium and sauté the minced garlic until fragrant, about 30 seconds to 1 minute. Add 3 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon brown sugar, 2 tablespoons sriracha, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon crushed red pepper flakes, and 2 tablespoons water. Stir everything together and simmer gently until the sauce thickens slightly, about 2-3 minutes.
  5. Combine: Add the buttered spaghetti into the sauce, tossing well to coat the pasta thoroughly. If needed, loosen the sauce by adding some of the reserved pasta water a little at a time until you reach your desired consistency. Return the seared steak cubes to the pan and stir everything together so the steak is well coated with the sauce.
  6. Garnish: Sprinkle the pasta with toasted sesame seeds and chopped fresh parsley or green onions. Add extra crushed red pepper flakes if you prefer additional heat.
