Instructions

  1. Prepare Ingredients: Peel and chop the sweet potatoes into roughly 1-inch pieces. Chop the onion, mince the garlic, and finely chop the fresh ginger. Set aside all prepared ingredients.
  2. Sauté Aromatics: Heat the avocado or olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and fresh ginger. Sauté for about 7 minutes, stirring frequently until the mixture is fragrant and the onions are soft but not browned.
