This recipe features a luscious cheese sauce made from a blend of Colby & Monterey Jack, sharp cheddar, and Velveeta cheeses, baked to perfection with a golden mild cheddar topping.

Ingredients

Scale

Macaroni and Cheese

  • 16 ounces elbow macaroni, cooked
  • 1 cup whole milk
  • 24 ounces evaporated milk
  • 3 eggs
  • 1 stick butter, cubed
  • 8 ounces Colby & Monterey Jack cheese, shredded
  • 8 ounces sharp cheddar cheese, shredded
  • 1 pound Velveeta, cubed
  • Salt, to taste
  • 1 tablespoon ground white pepper
  • 1 tablespoon granulated sugar
  • 1/2 cup sour cream (optional)

Topping

  • 1 cup mild cheddar cheese, shredded (for top)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the mac and cheese.
  2. Cook Macaroni: Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package directions until tender, then drain the pasta thoroughly.
  3. Prepare Milk and Egg Mixture: While the macaroni cooks, combine the whole milk, evaporated milk, and eggs in a large bowl. Add the sour cream (if using), salt to taste, ground white pepper, and granulated sugar. Mix well until all ingredients are fully combined to create the creamy base.
  4. Combine with Macaroni: Pour the milk and egg mixture over the drained macaroni and stir gently to combine everything evenly.
  5. Add Cheeses and Butter: Stir in the shredded Colby & Monterey Jack cheese, shredded sharp cheddar cheese, cubed Velveeta, and butter cubes until melted and uniformly mixed throughout the pasta.
  6. Transfer to Baking Dish: Transfer the prepared macaroni mixture into an oiled 10×14 inch pan or a deep 9×13 inch baking dish. Spread it out evenly.
  7. Add Topping Cheese: Sprinkle the one cup of shredded mild cheddar cheese evenly over the top of the macaroni mixture for a cheesy crust.
  8. Bake: Bake the mac and cheese in the preheated oven for 45 minutes or until the top is lightly browned and bubbly, indicating it is fully cooked and ready to serve.

Notes

  • For a creamier mac and cheese, use whole milk and evaporated milk as specified.
  • The ground white pepper adds flavor without altering the color of the sauce.
  • Sour cream is optional but adds tanginess and richness to the dish.
  • You can substitute Velveeta with processed cheese, but Velveeta gives a smooth melt.
  • Ensure to oil the baking dish to prevent sticking and to make serving easier.
  • This dish can be prepared a day ahead and reheated before serving.
