Turkish Gözleme with Spinach and Feta

Traditional Turkish flatbreads stuffed with a savory filling of sautéed spinach, crumbled feta, and herbs, then pan-cooked until golden and crisp. These hand-folded delights are perfect for breakfast, lunch, or a snack with tea.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 2 tablespoons olive oil (for filling)
  • 1 small onion, finely chopped
  • 3 cups fresh spinach, chopped
  • Salt and pepper, to taste
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon ground nutmeg (optional)
  • 3/4 cup crumbled feta cheese

Instructions

  1. In a large bowl, mix flour and salt. Gradually add warm water and olive oil, kneading until you have a soft, smooth dough. Cover and let rest for 30 minutes.
  2. In a skillet, heat olive oil and sauté onion until translucent. Add spinach and cook until wilted. Season with salt, pepper, chili flakes, and nutmeg. Remove from heat and let cool. Stir in crumbled feta.
  3. Divide dough into 6 equal balls. Roll each into a thin circle on a floured surface.
  4. Spoon filling over half of the dough, fold over to seal, and press the edges.
  5. Heat a dry non-stick skillet or griddle over medium heat. Cook each Gözleme for 2–3 minutes per side, or until golden brown and crisp.
  6. Slice and serve warm with lemon wedges or yogurt on the side.

Notes

  • You can prepare the dough in advance and refrigerate overnight.
  • Experiment with other fillings like potato, minced meat, or mushrooms.
  • Brush with melted butter or olive oil after cooking for extra flavor.
