Salad
- 1 can chickpeas (15 oz), drained and rinsed
- 1 medium apple, chopped
- 1 stalk celery, chopped
- 1/2 cup dried cranberries
- 1/4 cup walnuts (or pecans or sunflower kernels), roughly chopped

- 1/2 lemon, juiced
- 1 tbsp maple syrup
