Sweet Potatoes
- 2 large sweet potatoes
- Avocado oil spray
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp garlic powder
Ground Beef
- 1 lb grass-fed ground beef
- 3/4 tsp salt
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
Additional Ingredients
- 1 large avocado
- 16 oz 2% cottage cheese
- Crushed red pepper, to taste
- Hot honey (such as Mike’s Hot Honey), to drizzle
- Preheat and cook sweet potatoes: Preheat your air fryer to 400°F. Spray the sweet potatoes with avocado oil and sprinkle evenly with 1/2 tsp salt, 1/2 tsp paprika, and 1/2 tsp garlic powder. Toss to coat well. Place in the air fryer basket and cook for 18 minutes, shaking the basket halfway through to ensure even cooking and crispiness.
- Sauté ground beef with spices: While the sweet potatoes cook, heat a skillet over medium heat. Add the grass-fed ground beef along with 3/4 tsp salt, 1 tsp paprika, 1 tsp chili powder, 1 tsp garlic powder, and 1 tsp onion powder. Cook, stirring and breaking apart the meat, for 5-7 minutes until the beef is browned and cooked through. Drain excess fat if desired.
- Assemble the taco bowl: In a serving bowl, add 1 cup of the diced air-fried sweet potatoes and 4 oz of the spiced ground beef. Dice 1/3 of the avocado and add it to the bowl. Spoon in 1/2 cup of 2% cottage cheese on top.
- Garnish and serve: Sprinkle your taco bowl with crushed red pepper flakes according to your spice preference. Drizzle with hot honey for a perfect balance of spicy and sweet flavors. Enjoy immediately for a fresh, flavorful meal.
Notes
- You can substitute grass-fed ground beef with turkey or chicken for a leaner option.
- If you prefer less spice, reduce or omit the crushed red pepper and chili powder.
- The hot honey adds a unique sweet heat; if unavailable, try chili-infused honey or a drizzle of regular honey with a pinch of cayenne.
- For a dairy-free version, replace cottage cheese with a plant-based cottage cheese alternative.
- Leftover components store well separately in the refrigerator for up to 3 days for easy meal prep.
