Instructions

  1. Preheat and cook sweet potatoes: Preheat your air fryer to 400°F. Spray the sweet potatoes with avocado oil and sprinkle evenly with 1/2 tsp salt, 1/2 tsp paprika, and 1/2 tsp garlic powder. Toss to coat well. Place in the air fryer basket and cook for 18 minutes, shaking the basket halfway through to ensure even cooking and crispiness.
  2. Sauté ground beef with spices: While the sweet potatoes cook, heat a skillet over medium heat. Add the grass-fed ground beef along with 3/4 tsp salt, 1 tsp paprika, 1 tsp chili powder, 1 tsp garlic powder, and 1 tsp onion powder. Cook, stirring and breaking apart the meat, for 5-7 minutes until the beef is browned and cooked through. Drain excess fat if desired.
  3. Assemble the taco bowl: In a serving bowl, add 1 cup of the diced air-fried sweet potatoes and 4 oz of the spiced ground beef. Dice 1/3 of the avocado and add it to the bowl. Spoon in 1/2 cup of 2% cottage cheese on top.
  4. Garnish and serve: Sprinkle your taco bowl with crushed red pepper flakes according to your spice preference. Drizzle with hot honey for a perfect balance of spicy and sweet flavors. Enjoy immediately for a fresh, flavorful meal.
