Ingredients

Scale

Dry Ingredients

  • 2 cups All Purpose Flour
  • 1 cup Granulated Cane Sugar
  • 3/4 cup Cocoa Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Fine Sea Salt

Chocolate

  • 2 cups Chopped Milk Chocolate or Semisweet Chocolate
  • 1/2 cup Reserved Chopped Chocolate (from above)
  • 2 oz. Semisweet Chocolate, finely chopped (for ganache)

Wet Ingredients

  • 2 large Eggs + 1 Egg Yolk
  • 3/4 cup Plain Greek Yogurt
  • 1/3 cup Olive Oil
  • 3/4 cup Whole Milk (plus optional extra 1/4 cup to adjust batter)
  • 2 tsp. Vanilla Extract

Ganache

  • 1/2 cup Chocolate Ganache (prepared from below)
  • 1/4 cup Heavy Cream

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 425°F (220°C). Line a 6-count jumbo muffin tin or a 12-count regular muffin tin with liners for easy removal.
  2. Reserve Chocolate for Topping: Set aside 1/2 cup of chopped milk or semisweet chocolate to sprinkle on top of the muffins before baking.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cane sugar, cocoa powder, baking soda, and sea salt until well combined.
  4. Add Wet Ingredients: Create a well in the center of the dry ingredients. Add the eggs, egg yolk, Greek yogurt, olive oil, whole milk, and vanilla extract into the well. Whisk together until the eggs are fully beaten and wet ingredients are incorporated.
  5. Combine Batter: Switch to a spatula and fold the mixture gently until just combined. It is fine to have some flour clumps remaining. Avoid overmixing to keep muffins tender.
  6. Add Chopped Chocolate: Fold in the remaining chopped chocolate gently just until combined. If the batter feels too thick, gradually add up to 1/4 cup more milk, depending on your flour and consistency.
  7. Divide Batter in Tin: Using a large ice cream scooper, portion the batter evenly into the prepared muffin liners. Sprinkle the reserved chopped chocolate on top of each muffin for an extra chocolate boost.
  8. Bake the Muffins: Place the muffin tin in the oven and bake at 425°F for 5 minutes. After 5 minutes, without opening the oven door, reduce the temperature to 350°F (175°C) and continue baking for an additional 15 to 20 minutes. Check doneness with a toothpick; it should come out clean or with fine moist crumbs.
  9. Cool Muffins: Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer the muffins to a cooling rack for at least 10 minutes to cool completely.
  10. Prepare Chocolate Ganache: Heat the heavy cream just until it reaches the boiling point. Pour the hot cream over the finely chopped semisweet chocolate in a small bowl. Let it sit for 5-10 minutes to melt, then whisk vigorously until smooth and glossy. Chill in the refrigerator for 5-6 minutes until thickened slightly, suitable for piping.
  11. Fill Muffins with Ganache: Transfer the ganache to a piping bag and pipe about 1 tablespoon into the center of each muffin.
  12. Serve and Store: Enjoy these muffins warm or let them cool completely before storing in an airtight container. For regular-sized muffins, bake at 350°F for 15-20 minutes total.

Notes

  • For regular-sized muffins, bake at 350°F (175°C) for 15-20 minutes without the initial high-temperature burst.
  • The batter density can vary depending on the brand of flour used; add milk gradually to reach the right consistency.
  • Using chocolate ganache filling adds extra moisture and richness but can be omitted or replaced with frosting if preferred.
  • Allow muffins to cool slightly before filling with ganache to prevent melting.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
