Waffle Ice Cream Sandwiches with Pistachio Crust

Crispy golden waffle wedges filled with layers of colorful ice cream, rolled in crunchy pistachios or dipped in chocolate. These fun and nostalgic frozen treats are perfect for summer parties or weekend indulgence.

Ingredients

  • 6 round waffles (homemade or store-bought, halved)
  • 1 pint vanilla ice cream
  • 1 pint berry or chocolate ice cream
  • 1/2 cup shelled pistachios, chopped
  • 1/2 cup dark chocolate chips (optional, for dipping)
  • 1 tablespoon coconut oil (for melting chocolate)

Instructions

  1. Allow ice cream to soften slightly at room temperature for easier spreading.
  2. Line a baking sheet with parchment paper.
  3. Spread a thick layer of one flavor of ice cream onto a waffle half. Top with a second waffle half to create a sandwich.
  4. Repeat with remaining waffles and ice cream flavors.
  5. Firmly press edges and wrap each sandwich in plastic wrap. Freeze for at least 2 hours or until firm.
  6. For garnish, roll edges of sandwiches in chopped pistachios or dip one end in melted chocolate (melt chocolate chips with coconut oil in microwave).
  7. Place finished sandwiches back in freezer for 30 minutes before serving.

Notes

  • Use a serrated knife to neatly cut waffles in half if using full rounds.
