Watermelon Cucumber Feta Salad

A refreshing summer salad made with juicy watermelon, crisp cucumber, and creamy feta, finished with fresh mint and lime—perfect for hot days and light meals.

Ingredients

  • 1 cup cucumber, sliced into half-moons
  • 1/2 cup feta cheese, cubed
  • 1 tablespoon fresh mint, finely chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the watermelon cubes and cucumber slices.
  2. Gently fold in the feta cubes and chopped mint.
  3. In a small bowl, whisk together the lime juice and olive oil.
  4. Drizzle the dressing over the salad and toss lightly to combine.
  5. Season with freshly ground black pepper to taste.
  6. Chill for 10–15 minutes before serving for extra refreshment.
