Instructions

  1. Prepare aromatics: Shred the cooked chicken and chop the onion, jalapeño, and garlic. Heat olive oil in a large Dutch oven or pot over medium-high heat. Add the chopped onion and jalapeño and sauté for 4 minutes until softened. Add the garlic and sauté for an additional 30 seconds until fragrant.
  2. Add liquids and spices: Pour in the chicken broth and add the mild green chilies, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Stir well and bring the mixture just to a boil. Then reduce the heat to medium-low and let it simmer, uncovered, for 15 minutes to allow the flavors to meld.
  3. Add beans and creaminess: Drain and rinse the cannellini beans thoroughly. Add them to the pot along with the sour cream. Stir continuously to ensure the sour cream is evenly incorporated. Then add the shredded cooked chicken to the chili, followed by the milk. Mix thoroughly and allow the chili to return to a gentle simmer.
  4. Finish and serve: If using corn kernels, stir them into the chili now and heat through. Once heated, remove the pot from heat. Serve the chili hot, optionally topped with your favorite garnishes such as extra sour cream, shredded cheese, or fresh cilantro.
