White Chocolate Raspberry Truffles

Luscious raspberry-infused centers coated in smooth white chocolate and speckled with vibrant berry bits. These decadent bite-sized truffles melt in your mouth and are perfect for gifting, celebrations, or simply treating yourself.

Ingredients

  • 1 cup fresh or frozen raspberries
  • 1 1/2 cups white chocolate chips (for filling)
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups white chocolate (for coating), melted
  • 1/4 cup freeze-dried raspberries, crushed (optional for decoration)

Instructions

  1. In a saucepan over medium heat, cook raspberries until soft and jammy, about 5 minutes. Mash and strain to remove seeds, yielding a smooth puree.
  2. Return puree to the pan with heavy cream and a pinch of salt. Warm gently, then remove from heat.
  3. Stir in white chocolate chips and vanilla. Mix until smooth and glossy. Chill the mixture for 1–2 hours until firm.
  4. Once firm, scoop small amounts and roll into balls. Freeze for 30 minutes.
  5. Melt the white chocolate coating in a microwave or double boiler. Dip each truffle into the coating, placing them on parchment to set.
  6. Optional: Sprinkle crushed freeze-dried raspberries on top before the coating sets.
  7. Let truffles set completely, then store in the fridge in an airtight container.

Notes

  • Use good-quality white chocolate for a smoother finish.
  • Truffles can be stored in the fridge for up to 1 week.
  • If mixture is too soft to roll, chill a bit longer or add a few more white chocolate chips.
