Chocolate Mixture

  • 180g white chocolate, chopped
  • 80ml (1/3 cup) thickened cream
  • 1 tsp vanilla bean paste (optional)

  • 40g (1/4 cup) dried cranberries, chopped
  • 40g (1/4 cup) pistachios, chopped

Coating

  • 35g (1/3 cup) desiccated coconut

Instructions

  1. Melt the Chocolate and Cream: Place the chopped white chocolate and thickened cream in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn’t touch the water. Stir continuously with a metal spoon until the chocolate is fully melted and the mixture is smooth. If using, stir in the vanilla bean paste. Allow the mixture to cool slightly.
  2. Add Cranberries and Pistachios: Fold the chopped dried cranberries and pistachios into the cooled chocolate mixture. Cover and refrigerate for about 3 hours, stirring occasionally, until the mixture is firm enough to shape but still a bit sticky.
  3. Roll into Balls and Coat: Place the desiccated coconut in a shallow dish. Using a level tablespoon, scoop portions of the chocolate mixture and roll them into balls with your hands. Roll each ball in the coconut to coat evenly.
  4. Store and Serve: Arrange the coated truffles in a single layer inside an airtight container. Keep them refrigerated until ready to serve.
