- 4 slices sourdough bread
- 2 tablespoons butter, softened
- 1 cup shredded mozzarella or provolone cheese
- 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
- 1 cup fresh spinach leaves
- 1 garlic clove, minced
- 1 teaspoon olive oil
- Salt and black pepper, to taste
- Pinch of red chili flakes (optional)
- In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper. Set aside.
- Butter one side of each bread slice. Place 2 slices, buttered side down, on a skillet or grill pan over medium heat.
