- 1 teaspoon salt
- 1/2 cup crumbled feta cheese
- 2 eggs
- 1/4 cup fresh parsley or mint, chopped

- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture with a towel.
- In a bowl, combine zucchini, feta, eggs, breadcrumbs, parsley, garlic, and pepper. Mix to form a sticky batter.
- Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter and flatten slightly. Cook 3–4 minutes per side until golden brown. Set aside.
- In the same pan, heat 1 tablespoon olive oil for the sauce. Sauté onion and garlic until soft.
- Add crushed tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.
- Gently add fritters back into the sauce and simmer for 5 more minutes.
- Garnish with fresh herbs and serve hot.
