Zucchini Feta Fritters in Tomato Herb Sauce

Golden zucchini and feta fritters are pan-seared until crispy and simmered in a fragrant tomato herb sauce. This Mediterranean-inspired dish is packed with savory flavor, melty cheese, and garden-fresh herbs—perfect for a hearty vegetarian dinner or appetizer.

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup crumbled feta cheese
  • 2 eggs
  • 1/4 cup fresh parsley or mint, chopped
  • 1/2 cup breadcrumbs
  • 2 garlic cloves, minced
  • 1/4 teaspoon black pepper
  • Olive oil for frying
  • 1 tablespoon olive oil (for sauce)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 (14 oz) can crushed tomatoes
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil or mint for garnish

Instructions

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture with a towel.
  2. In a bowl, combine zucchini, feta, eggs, breadcrumbs, parsley, garlic, and pepper. Mix to form a sticky batter.
  3. Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter and flatten slightly. Cook 3–4 minutes per side until golden brown. Set aside.
  4. In the same pan, heat 1 tablespoon olive oil for the sauce. Sauté onion and garlic until soft.
  5. Add crushed tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.
  6. Gently add fritters back into the sauce and simmer for 5 more minutes.
  7. Garnish with fresh herbs and serve hot.

Notes

  • Be sure to squeeze out as much liquid as possible from the zucchini to prevent soggy fritters.
  • Use a mix of parsley and mint for extra Mediterranean flair.
  • These fritters can be made ahead and reheated in the sauce.
  • Serve with warm pita or a side of yogurt for a complete meal.
