Meatballs

  • 2 Tbsp olive oil
  • 3 cloves garlic, minced

  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 3/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 large eggs, lightly beaten
  • 2 lbs ground chicken (or ground turkey)
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese
  • 2 Tbsp minced parsley (optional, for garnish)

Instructions

  1. Make firecracker sauce: In a small saucepan, combine brown sugar, hot sauce, apple cider vinegar, light soy sauce, garlic powder, kosher salt, and red pepper flakes. Cook over medium heat, stirring frequently, until the sauce is well combined and thickened, about 7-10 minutes. Remove from heat and let cool. If sauce thickens too much while cooling, stir in water 1 teaspoon at a time to reach desired consistency.
  2. Prepare meatball mixture: In a large mixing bowl, whisk together olive oil, minced garlic, minced chives (if using), kosher salt, onion powder, black pepper, smoked paprika, and beaten eggs until fully combined.
  3. Add main ingredients: Add ground chicken, panko breadcrumbs, and shredded Parmesan cheese to the bowl. Gently mix with your hands to combine, taking care not to over-mix to ensure tender meatballs.
  4. Preheat air fryer: Set your air fryer to 400°F and let it preheat while you form the meatballs.
  5. Form meatballs: Using a cookie scoop or your hands, form the mixture into meatballs approximately 2 inches in diameter.
  6. Prepare air fryer basket: Spray the air fryer basket with a nonstick cooking spray such as olive oil or avocado oil spray. Place the meatballs in a single layer inside the basket, working in batches if needed to avoid overcrowding.
  7. Air fry first side: Lightly spray the top of the meatballs with cooking spray. Air fry at 400°F for 10 minutes.
  8. Flip and air fry second side: Using tongs, flip each meatball over, spray the tops again with cooking spray, then continue air frying for another 5-7 minutes until the meatballs reach an internal temperature of 165°F.
  9. Glaze meatballs: Remove meatballs from air fryer and dip each one into the firecracker sauce, coating thoroughly. Return the dipped meatballs to the air fryer basket in a single layer.
  10. Final air fry: Air fry the glazed meatballs for an additional 2 minutes to set the sauce.
  11. Serve: Remove the meatballs and transfer to a serving dish. Serve hot with any remaining firecracker sauce on the side. Garnish with minced parsley if desired.
