Ingredients

Scale

Dry Ingredients

  • 1 cup almond flour (blanched almond flour)
  • 1 cup quick oats (gluten free, if needed)
  • 2 tablespoons white sugar (or sugar free substitution)
  • 1/4 cup brown sugar (or sugar free brown sugar)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 large egg (or egg free substitutions)
  • 1/4 cup butter (melted)
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk of choice (to adjust batter consistency)

Add-ins

  • 1/2 cup chocolate (chopped)

Instructions

  1. Preheat oven: Preheat your oven to 180°C (350°F). Line a large baking sheet with parchment paper and set it aside for the cookies.
  2. Mix dry ingredients: In a large mixing bowl, combine almond flour, quick oats, white sugar, brown sugar, baking powder, baking soda, and salt. Stir well to evenly distribute all dry components.
  3. Add wet ingredients: Add the egg, melted butter, and vanilla extract to the dry mixture. Mix until all ingredients are combined into a consistent dough. Fold in the chopped chocolate chunks gently.
  4. Adjust consistency: If the dough feels too thick or dry, add 1 to 2 tablespoons of your preferred milk gradually until the dough becomes workable for shaping.
  5. Shape cookies: Using a cookie scoop or a spoon, portion out heaping tablespoons of dough. Roll each portion into a ball with your hands, then place the balls on the lined baking sheet. Press each ball down slightly to form cookie shapes.
  6. Bake cookies: Bake in the preheated oven for about 10 minutes or until the edges turn golden brown indicating the cookies are done.
  7. Cool: Remove the cookies from the oven and allow them to cool completely on the baking sheet before serving to let them set properly.

Notes

  • Milk of choice can be dairy or plant-based depending on dietary preference and is used to adjust dough consistency.
  • Egg can be substituted with flax or chia egg for a vegan version.
  • Use gluten free oats to keep the recipe gluten free.
  • To reduce sugar content, substitute white and brown sugars with sugar-free alternatives.
  • Store cookies in an airtight container at room temperature for up to 5 days.
