Instructions

  1. Combine Ingredients: In a medium-sized bowl, mix together the almond butter, honey, softened coconut oil, oats, flax seeds, chia seeds, mini chocolate chips, shredded coconut, and chopped almonds. Stir thoroughly until the oats are evenly coated with the liquid mixture.
  2. Chill Mixture: Place the bowl in the refrigerator for about 10 minutes. This chilling step helps reduce the stickiness of the mixture, making it easier to handle when rolling into balls.
  3. Roll into Balls: Using your hands, roll the chilled mixture into small balls, approximately 1 to 1.5 tablespoons in size. This recipe yields about 18 balls. For best results, squeeze the mixture firmly in your hand and carefully shape it into rounded balls. Place the formed balls onto a cookie sheet lined with parchment paper or a silicone liner.
  4. Chill the Balls: Return the cookie sheet with the energy balls to the fridge for another 10 minutes to help them firm up.
