Ingredients

Scale

Main Ingredients

  • 3 cups cold cooked jasmine rice
  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup frozen peas and diced carrots
  • 2 green onions, sliced

Sauce

  • 1/3 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tablespoon sriracha (more to taste)
  • 1 tablespoon soy sauce

Instructions

  1. Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Scramble Eggs: Using the same skillet, crack the eggs in and scramble gently. Cook until just set, avoiding overcooking to keep them soft and tender. Remove the eggs and add to the cooked chicken.
  3. Sauté Vegetables: Add the remaining tablespoon of oil to the skillet. Sauté the frozen peas and diced carrots until they are just tender, about 3-4 minutes.
  4. Add Rice: Add the cold cooked jasmine rice to the skillet with the vegetables. Break up any clumps and allow the rice to crisp slightly by cooking undisturbed for a couple of minutes, enhancing the texture.
  5. Combine Chicken and Eggs: Return the cooked chicken and scrambled eggs to the skillet with the rice and vegetables, stirring to combine evenly.
  6. Prepare Sauce: In a separate bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and soy sauce until smooth and well combined.
  7. Mix Sauce and Heat Through: Pour the prepared sauce into the skillet and stir all ingredients together until everything is evenly coated and heated through, about 2-3 minutes.
  8. Garnish and Serve: Remove from heat, sprinkle the sliced green onions over the top, and serve the Bang Bang Fried Rice hot for the best flavor and texture.

Notes

  • Using cold, day-old rice helps to prevent the fried rice from becoming mushy and achieves better texture.
  • Adjust the amount of sriracha based on your spice preference; add more for extra heat.
  • You can substitute chicken breast with shrimp or tofu for a different protein option.
  • For extra crunch, consider adding chopped water chestnuts or roasted cashews as garnish.
  • If Thai sweet chili sauce is unavailable, you can substitute with a mixture of sweet chili paste and a touch of honey or sugar.
