Ingredients

Scale

Buns and Spreads

  • 2 croissants (preferably La Boulangerie for best buttery layers)
  • 2 tbsp butter (Kerrygold recommended for high-fat content)
  • 3 tbsp burger sauce

Beef Patties

  • 8 oz ground beef (80/20 ground chuck for juiciness)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/2 tsp Worcestershire sauce
  • 1 tbsp neutral oil
  • 4 slices cheddar cheese

Vegetables and Toppings

  • 1 medium onion (thinly sliced into rounds)
  • 1 tomato (sliced)
  • 2 pickles (sliced into spears)
  • 2 leaves iceberg or romaine lettuce
  • 5 tsp teriyaki sauce (Kikkoman preferred for sweet-savory glaze)

Instructions

  1. Prepare vegetables and croissants: Slice the onion into thin rounds, tomato into slices, and pickles into spears. Cut each croissant in half horizontally and set aside.
  2. Toast croissants: Heat 2 tbsp butter in a large skillet over medium heat until foaming. Place croissant halves cut-side down into the butter. Toast for 2 minutes per side until golden and crispy. Transfer toasted croissants to a plate.
  3. Cook onions: Return skillet to medium-high heat and add 1 tbsp neutral oil. Add sliced onions and cook for about 2 minutes, stirring occasionally, until they begin to soften and lightly caramelize. Push onions to the sides of the pan and let them sit undisturbed for 30 seconds to develop color.
  4. Form and season patties: Divide ground beef into two portions and place in center of skillet over onions. Using a sturdy spatula, press each portion into thin, wide patties. Season with salt, black pepper, smoked paprika, and Worcestershire sauce. Cook undisturbed for 2-3 minutes to develop a caramelized crust.
  5. Flip and portion patties: Carefully flip both patties over. Using spatula, divide each patty into two smaller sections vertically, creating four patties in total. Top each patty with a slice of cheddar cheese.
  6. Melt cheese and finish patties: Cover skillet with lid or foil and cook for 3 minutes until cheese melts fully and meat is cooked through. The cheese and caramelized onions create a flavorful foundation.
  7. Assemble burgers: Spread 1.5 tbsp burger sauce on each toasted croissant bottom half. Layer two cheese-topped beef patties on each bottom half, then add tomato slices, pickle spears, and lettuce leaves. Drizzle 2.5 tsp teriyaki sauce over fillings.
  8. Top and serve: Place croissant top halves on burgers, press gently but firmly to compress. Serve immediately while croissants are warm and cheese is melted.

Notes

  • Use high-fat ground beef (80/20) for juicier patties with great flavor.
  • Press beef patties firmly against the pan to create a crispy, caramelized crust unique to smash burgers.
  • To prevent sogginess, toast croissant halves in butter until crisp before assembling.
  • Use a lid or foil to cover burgers when melting cheese for even cooking and perfect melt.
  • Adjust seasoning amounts to taste, especially if using different types of cheese or buns.
  • Serve immediately for best texture and flavor.
