Ingredients
- 2 cups rolled oats (gluten-free, if needed)
- 2 large bananas (mashed)
- 1/2 cup peanut butter
- 1/4 cup blueberries
- Preheat Oven: Preheat the oven to 180C/350F. Line a cookie sheet or baking tray with parchment paper and set aside.
- Mix Ingredients: In a large mixing bowl, combine the rolled oats, peanut butter, and mashed bananas. Stir well to blend the ingredients evenly. Then gently fold in the blueberries using a rubber spatula to avoid breaking them.
- Shape Cookies: Form 12 balls of dough from the mixture and place them evenly spaced on the lined baking tray. Press each ball down lightly to shape them into cookie rounds.
- Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the cookies are golden around the edges and just cooked through in the center.
- Cool Cookies: Remove the cookies from the oven and allow them to cool on the baking tray for 10 minutes. Then transfer them to a wire rack to cool completely before serving.
Notes
- Use gluten-free rolled oats if you need to keep the recipe gluten-free.
- You can swap peanut butter with almond or cashew butter for a different flavor.
- Make sure the bananas are ripe and mashed thoroughly for natural sweetness and binding.
- Feel free to add a pinch of cinnamon or vanilla extract to enhance flavor.
- Store the cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
